Full of sweet, fruity character, Doocot is light, intensely fruity, floral and complemented by a rich colour coming from the high quality bourbon casks it has matured in. Comprising of the same liquid as Kingsbarns’s first release Dream to Dram, but undisturbed for a longer oak maturation allowing complexity to develop while maintaining balance.
This release was matured in a combination of ex-bourbon and STR (shaved, toasted and re-charred) ex-Portuguese red wine casks.
Tasting notes
NOSE: Sweet and floral, soft brown sugar with banana cake batter and tropical notes.
PALATE: Pineapple syrup, summer berries and a hint of rhubarb.
FINISH: Kiwi fruit and citrus zest.

Kingsbarn Distillery is one of the newer distilleries in Scotland, located in the Fife peninsula, near St Andrews and owned by Wemyss family.
House style of this Lowland, Kingsbarns is elegant, soft and fruity. Its whiskies are predominantly matured in American oak. The distillery building has been converted from a semi-derelict farmhouse into an impressive modern distillery and visitor centre, at the heart of the distillery is an old ‘doocot’ (also known as dovecot) which is subtly incorporated into the Kingsbarns bottle.
